
Your New Favorite Summer Salad: Peach and Tomatoes with Fresh Herbs
Meet my favorite summer time salad. With tomatoes and cucumbers straight from the garden, a wild mix of fresh herbs and the sweetest peaches you can find – this simple dish is quick to make and even quicker to disappear from the salad bowl. Serve this summer peach tomato salad with BBQ chicken, grilled fish or even as a light side on burger night!

Prep Time: 10 minutes
Serves: 3-4 depending on how hungry you are
Ingredients:
2 medium-large tomatoes
1 large cucumber
1 large peach
1-2 radishes
1 avocado
1/2 cup mixed fresh herbs: dill, chive, basil, cilantro, parsley, tarragon, etc – whatever you have!
Balsamic vinegar
Extra virgin olive oil
Sea salt
Freshly ground black pepper
Method:
Wash all of your produce. If not using organic, mix equal parts white vinegar and water, soak for 10 minutes and then rinse thoroughly.
Tomatoes: cut in half through the core. Cut a “v” around the core to remove it. Chop into large chunks.
Cucumbers: peel then slice in half lengthwise. Cut in half again so you have 4 long quarters. Chop into large chunks.
Peach and avocado: using a sharp knife cut around the pit. Twist to separate halves. Remove the pit. Chop into large chunks.
Radishes: slice into rounds. You can leave the rounds as is or julienne into strips.
Herbs: rough chop all together.
Combine produce and herbs in a medium mixing bowl. Drizzle with 1 tbsp balsamic vinegar and 1 tbsp olive oil. Season to taste with salt and pepper. Gently – you don’t want to smash the avocado – toss to mix completely.
Serve immediately or store in the refrigerator until ready to eat.
